Chicken Adobo

4 lbs bone in chicken thighs
3 C soy sauce
3/8 C apple cider vinegar
3/8 C olive oil
bulb garlic, peeled and chopped
3" piece ginger
2 bay leaves

Place chicken in Instant pot.
Add other ingredients.
Add just enough water to cover chicken.
Cook on High Crock Pot 4 hours.
Serve with rice and discard bay leaves.
